- Research Objective: Participated in the entire process of the agricultural product processing research project, to investigate freeze-thaw treatment effects on potato vermicelli properties- Control Experiment: Designed and executed controlled experiments on six different types of potato vermicelli, evaluating the impact of factors such as moisture distribution, texture quality, microstructure, and sensory characteristics on physicochemical properties of extruded starch gel - Change Analysis: Utilized advanced analytical techniques including moisture analysis, texture profiling, microscopy, and sensory evaluation to assess the attributes of freeze-thaw treated to potato vermicelli- Project Result: At the microscopic level, the freeze-thaw cycle leads to partial crystallization and decrystallization of starch particles, as well as the rearrangement of protein structures, which affects the gel behavior and network structure of vermicelles; At the macro level, freeze-thaw treatment may change the physical properties of vermicelles such as hardness, elasticity and chewability
