This is a family taco stand where I am in charge of cooking, purchasing inventory, and inventory control every Sunday. When introducing a new item to sell I would do a trial run and gather data to determine whether or not there would be a profit. Many factors can determine the profitability of a new item so my trial runs usually lasted a month. Inventory purchasing also takes data collection as different products can sell faster than others.
