The project involved a Fisher-Johns technique to identify and study the thermal degradation of the inclusion compounds during the heating process. The next stage involved measuring the thermal stability by Differential Scanning Calorimetry and Thermogravimetry. The crystal structures of the hosts plus guests were determined by X-ray Diffraction followed by a kinetic study of desorption using Thermogravimetry. Two constituent competition experiments were conducted using Nuclear Magnetic Resonance to identify which guest is preferred by a host sample. -

Two by-products (hydroperoxides and conjugated dienes) from the lipid peroxidation pathway were measured using a spectrophotometer. The antioxidant content of each berry extract was determined in terms of total polyphenolic content by the Folin-Ciocalteau method.
