Full responsibility over the group portfolio of chef driven Indigo Delicatessen restaurants; managed brand P&L, operations, people, brand standards & operating procedures, marketing, statutory compliances and growth

Launched the prototype of Wok Chi "Fast Casual Restaurant" serving Asian Stir Fries and Dim Sums in Sarasota, Florida; expanded the business with the addition of a store in Tampa, Florida and on 3rd Avenue, New York. Pre-opening responsibilities included the setting up of the flagship store; creating a "Unique Selling Proposition" (USP) for the brand, managing architects and food service consultants to maximise workplace efficiency and operational effectivity, establish Standard Operating Procedures (SOP's), drive vendor relationships and setting up the restaurant management systems. Managed the recruitment and mentoring of key management personnel, driving sales and maximising labor productivity for the newly established business.

Managed corporate and franchise expansion strategy for corporate and franchised restaurants. Identified opportunities for business growth for Casual Dining Restaurants & Quick Service Restaurants by providing ongoing operations support by way of business MIS, training and resources across GCC and India. Lead and facilitate cross functional resources to drive efficient, time saving and cost effective processes.

Managed 4 Casual Dining Restaurants (CDR) and 6 Quick Service Restaurants (QSR) units across 40+ operating units in the United Arab Emirates, Oman, Bahrain and Qatar. Mandated to maintain operational excellence and business performance; managed marketing, human resource, compliance and legal functions for all brands. Established new stores, remodelled existing units and project managed their refurbishments.Wrote, reviewed, authorised and distributed SOP's for all brands. Engaged with a International Franchise Consultant firm to create Franchise Operational Manuals for two Quick Service Restaurant Brands.

Oversaw all pre-opening activity and operations for three Casual Dining Restaurant (CDR) brands Haru Robatayaki, Pane Caldo & Da Shi Dai. Ensured the highest levels of quality, menu creativity and delivery of unique guest experience at each brand. Recruited a team of professionals from varied international backgrounds for key management and mid-management positions across brands. Focussed on day-to-day activities to develop strategy and implement business plans to maximize revenue and profit.
