HIGHLIGHTS / ACHIEVEMENTS- consistently ranked among the top locations in regards to sales, cost management, employee development and specific audits performed by mystery shoppers- consistently ranked among the top locations in regards to Steritech sanitation audits- low turnover rate for a restaurant environment due to high engagement and the hiring of the right team members. This in turn helped keep my teams training costs lower, allowing me to invest more into cross training and seminars- won a competition which included all corporate Kitchen Managers nationally, based on the performance of our locations over an entire quarter- we were consistently rated as one of the "Best places to eat" in many local publications- was chosen as a corporate trainer for many new locations including Surrey (Guildford) and Langley, Kelowna- I was asked to work with Red Deer as they were struggling in many aspects. In the few months after I took over, we improved sales, food cost, and labor costs significantly, as well as improved all audit scores to put Red Deer in the top 5 from basically the bottom. The Kitchen Manager I developed went on to become an Executive Kitchen Manager RESPONSIBILITIES- responsible for all hiring and ongoing development of the back of house team including prep cooks, dishwashers, line cooks for many different stations and the right assistants- projection of food sales and labor costs weekly- responsible for achieving targets for the following categories: ~Labor ~Food Cost ~Kitchen Paper ~Kitchen Smallwares ~Uniforms ~Chemical/Cleaning- scheduling the entire team effectively and within labor targets and then ensuring those targets are achieved - ordering of all food, equipment and supplies for the back of house and managing the inventory for each- ensuring all equipment etc. was maintained and serviced accordingly- chosen to assist other stores in covering a manager or developing a management team
