NFSC491 - Issues, Problems and Opportunities in the CAPSTONE Dietetics course for college seniors.Throughout the curriculum, students gain knowledge, skills and perspectives regardingspecific aspects of nutrition, foodservice, and dietetic practice. This course allows students to (1)integrate knowledge and theory of nutrition, food, management, education/communications, andsocial and behavioral sciences necessary to support quality dietetics practice and (2) cultivate a professional perspective in dealing with issues such as professional ethics, communication and counseling skills, and how to function as a member of the health care team. In addition, this course will familiarize students with emerging issues in dietetics. NFSC 491 has been designated a CORE capstone course.Objectives:Upon completion of the course, the student will be able to: Apply the problem solving process to the issues of the current practice of dietetics; Participate effectively in the group process and decision-making by demonstrating appropriatecommunication and interpersonal skills as a participant and/or leader; Apply and integrate knowledge and theory of nutrition, food and management to the practiceof dietetics; Effectively communicate appropriate nutrition information to peers and other healthprofessionals, clients and consumers; Practice a code of personal and professional ethics in the classroom; Search the literature and present findings and recommendations to support or refute an issuepertinent to dietetic practice; Articulate a career plan related to nutrition and dietetics.

Previously I was on the board as Mentor Coordinator. Then on the board as Private Practice Specialty Group Chair mentoring Registered Dietitian Nutritionists who want to open and/or expand their nutrition counseling practices.
