In 2012, we took over from Dariush's parents, and began the process of creating something that honoured that history, while also reflecting our own vision. That hands-on approach is what makes Cazador so special. We've always been a game-meat restaurant and really care about the ingredients we use. We hunt wild meat, and we know our suppliers personally. We love food that explores traditional ingredients used in unusual ways. Anything less and we'd be doing ourselves and our guests a disservice. It means our menu is carefully developed to make the best use of seasonal produce and to deliver something new and exciting to our clients, while still being a totally palatable, satisfying meal. A great example of this is our vegetarian offering. We're famous for our game, but take as much care to make our non-meat dishes exciting - they're never pasta or risotto. We draw inspiration from Spanish and Persian cooking traditions, with lots of fresh herbs and rich spices. That inspiration is reflected in our drinks list too - we were responsible for relaunching sherry as a delicious pre and post-dinner imbibement, and always offer a collection of delicious and unusual wines to suit all palates, dishes and budgets.
