Tivoli gardens is a beautiful amusement park, based in the center of Copenhagen, that dates back to 1843, when it opened it's gates for the first time. The Food & Beverage department, which includes 30 of the on site outlets and restaurants, in the garden, operate a range of concept restaurants (wagamama & Mazzoli's), family restaurants, easyfood outlets, cafés, convenience shops and the bars in relations to the concerts. Annually the F&B department are servicing around 2 million meals, and employ more than 500 employees, across the 30 sites.In this position I have:• 9 direct reports, 6 F&B managers and a dedicated support team of three employees consisting of an exclutive headchef, a project coordinator, and an administrative coordinator.• Responsibility for the gastronomic offering and service setup• Management of investment and maintenance projects and budgeting• Responsible for operational budgeting and strategy• Member of the Tivoli commercial management team

The wagamama franchise is in Denmark owned and operated by the amusement park Tivoli A/S, whom I, in the summer of 2014, joined in the position of general manager for the wagamama restaurants i Denmark. The purpose of the position was to start the roll out of the brand in Denmark, which occurred with the opening of the second wagamama, at the end of August 2014, on Frederiksberg. The F&B department within the hotel operates a 320 seats buffet restaurant, a 120 seats a la carte restaurant and a corporate & banqueting area with 6 conference rooms and a 80 seats lounge bar. Yearly the hotel served over 200,000 meals in the 3 areas, together with a brigade of 17 chefs, 32 waiters and 50 seasonal staff members.• 5 direct reporting managers and 1 administrator• Responsible for Food & Beverage budgeting and delivery• Managing CAPEX and general maintenance investments• Driving the highest standards for food safety Biggest achievements: Increasing the average spend per guest by 20% within one year, by utilizing the restaurants capacity more efficiently and improving sales techniques and awareness amongst the employees. Improved both food & beverage cost of sales, through stronger control on purchasing and wastage Raised the food quality and service scores with more than 5% within year one.Increasing profit per guest by more than 40% within year one.
