I have 30+ years of experience in the food/hospitality industry. This experience combined with a culinary background has led me to be involved in concept design and development of over twenty new businesses from quick service restaurants, sporting event concessions, foodservice operations, nightclubs, retail apparel, fine dining and manufacturing. My appetite from good food began at an early age, learning to cook alongside my grandmother, Angelina Colletti. At the age of 13 I started working in the foodservice industry as a dishwasher. By 18 years old I was in culinary school and graduated from the Culinary Institute of America in Hyde Park, New York in 1980. After culinary school I continued my education, receiving a Bachelor’s Degree from Florida International University. Since then I have worked across the country in various executive management roles in the food and hospitality industries. All my experiences led me to create Mediterranean Brands, the company I currently own and operate. This is my proudest accomplishment to date and look forward to running this business for many years to come.
