At Brewing Services Ltd, our company philosophy is to help establish breweries with a complete commitment to quality, promoting excellence throughout the brewing process, assisting brewers in producing beers of the highest possible standard and training new brewers to reach their full potential.We have helped establish over 150 breweries over the past 27 years, ranging from 2bbl brewpubs to 70bbl regional breweries. We offer ongoing QA & QC services to both new and existing breweries, with regular audits of both brewplant and brewing processes to help to optimise brewery performance and ensure high quality products.Our twice-yearly course, The Fundamentals of Mini-Brewing, has been running every March and November for over 25 years. It was set up by professional brewers to assist others working in the industry, or those looking to start, to understand in greater detail the practical aspects of brewing and the basic theory that underpins the brewing process.

Working from raw materials intake to final product release, I carried out the majority of the day-to-day testing to maintain the quality and consistency of the beers at London’s second largest brewery. This included both QA and QC measures, ensuring that all physical parameters were within specification, checking for microbiological infections and investigating customer complaints.I also chaired the tasting panel and produced weekly quality reports for the management team, as well as checking raw materials and brewery hygiene products. My daily duties included:• OG/PG/Abv Checks• pH, Colour & Bitterness Analysis• Initial/Forced Haze Testing• CO2/Dissolved Oxygen Checks• Microbiological Testing (spread-plating, membrane filtration)• Yeast Analysis (counts & viability)

As Second Brewer at one of the UK’s few lager-producing microbreweries, I shared day-to-day brewing responsibilities with the head brewer. I took charge of the brewery in his absence, ensuring the quality of the product at all stages of the brewing process.As well as brewing, my duties included:• General site management• Gravity checks (OG/PG)• Head stability checks• Flavour/clarity analysis

Working as part of a small team, I gained hands-on experience of each stage in the brewing process. I aided in the brews themselves, before transferring and packaging the finished product. Other duties included:• Plant sterility testing• Yeast analysis/cell counts• Sample plating (inc. gram staining and streak plating)

Working with a number of different breweries, I gained experience of most aspects of the brewing industry. I have been involved in projects ranging from the commissioning of new brewplants, through the brew itself, to the quality control and laboratory analysis of the final product. In addition, I was involved in brewery audits and wrote presentations on a wide variety of subjects for a number of different courses.

Good communication and presentation skills were vital, as was the ability to work to strict deadlines and the flexibility to respond quickly to new problems.
