About Robert Copelan

I am a native Northwesterner having grown up in Olympia, Wa and lived in the Seattle area since the Mid 1990’s. I love to travel and have been to many countries throughout Europe and Africa, exploring each culture through its food. “Show me what you eat and I will tell you who you are.” A quote by Jean Anthelme Brillat-Savarin is at the core of my cooking. Getting to know my clients wants and needs being a paramount component of my program.I have a varied culinary background over the last twenty years, ranging from owning my own franchise pizza delivery kitchens to being the Executive Chef of a four diamond hotel. Along the way I have also held Sous Chef, Chef De Cuisine and Executive Sous Chef positions in the Casino business. I feel coming to the Lakeshore is a perfect opportunity to take my experience and craft a Dining Service program to best serve our residents.
