The Albert Roux Café is full service brasserie with a classic yet contemporary European theme. Roux Express is a ‘Starbucks’ type concept with a comprehensive food offer. Quality of Service and Food are of paramount importance. (Albert Roux is the UK’s most established chef- Published 8 books and is only UK chef to own two restaurants both with three Michelin stars.) Additional Responsibilities: Concession RestaurantsResponsible for 64 restaurants/cafes and $45 million revenue. Overall objective was to develop and implement a turn around for the group’s restaurant division addressing declining sales and operating standards. Primarily a restaurant turn around, and start up role.
