Recombinant protein expression quantification and analysis in yeasts Yarrowia lipolytica and Saccharomyces cerevisiae after Adapted Laboratory Evolution using brewer’s spent yeast and molasses as upcycled sources of substrate for fermentation. During my stay, I will use molecular biotechnology techniques such as CRISPR, USER Cloning, Flow Cytometry and Whole Genome Sequencing under the supervision of doctoral student Arrate Sainz de la Maza.

As part of my Master's Thesis, I explored the field of metabolic engineering of brewer's yeast to delve into the release of free thiols for Evodiabio's Yops™ aroma vials to enhance tropical notes as a substitute for hops in non-alcoholic beer. During my stay, I gained skills in yeast cloning and transformation, as well as some first steps in GC-MS analysis and valuable experience in a start-up.

I have gained insight into all the steps involved in yeast production from vessel-making and propagation stages all the way to the final packaging of the product on an industrial scale
