This is a challenging and rewarding role including a variety of important roles including: Cheese Grading; Management of stock; Sales and distribution of the product, Relationship management of the manufacturers, contract negotiations and forecasting. Ornua is Ireland’s largest exporter of Irish dairy products. It has annualised sales of over €2 billion and has sales and marketing teams across the globe. I’m responsible for the product management of Cheddar Cheese, produced by three large manufacturers. I grade over 40,000 MT of cheddar annually with a value of approx. €120,000,000; management of the stock and its distribution and branding for both national and international markets. I managed the catering for Astellas manufacturing site in Mulhuddart, Dublin 15. There was a team of 5 and I was responsible for: Staff Management | Food Hygiene | Menu Design | Menu Costing | Cooking and serving of all food | Stock Control | Ordering | Cleaning Schedules and Manual Handling. With Campbell’s I have been trained in Accounts Management, and Staff Management, Food Hygiene and Manual Handling which I use on a daily basis. The role involves menu planning and costing, cooking and serving of all food, breakfast and lunch (with 2 choices and a sandwich and salad bar) for up to 180 people a day. Stock control, ordering, staff management, cleaning schedules, H.A.C.C.P and cash control are all part of my duties.
