At Catskill Chocolate Co. I collaborated with one of three partners in leading the entire BOH production team + schedule. On a day-to-day basis, I determined pars, communicated inventory, baked, cooked, and produced chocolates for retail. I also worked retail and barista-ed.

At the Germantown Laundromat, in addition to managing the store’s inventory, cashflow, and communications with vendors, I prioritized our goal of sustainability in packaging + product end-of-life by conducting constant research, spreadsheet management, and also speaking directly with producers. I forged extremely strong relationships with the people we sourced from, which became invaluable to the business even after my departure.

I helped Otto's Market achieve their long-term sustainability goals. These ranged from fostering transparency in sourcing and communicating that to customers to running social media accounts and assuring they were in line with the business's ethics. I implemented measures that accurately tracked waste, while also reducing waste horizontally across the establishment, from BOH to FOH.

Aided in regular food pantry operations. Wrote grants and assisted in organization's application for 501(c)(3) non-profit status. Researched regional food insecurity.

Practiced rotational grazing, assisted in handling, moving, shearing, and hoof trimming of sheep.

Assisted head baker in making breads, worked with wood-fired oven. Ran bakery solo twice a week.

Worked on the line to prepare food for Celebrate Brooklyn concert attendees. Assisted in prep with spanish speaking coworkers. Helped with full build up, break down, and nightly cleaning of outdoor kitchen. Organized prep, deliveries, and inventoried.

The Bard Farm is a 1.25 acre farm on Bard's campus. Assisted in various farming duties including but not limited to weeding, seeding, mulching, composting, and planting. The farm has bees and is home to the only cranberry bog in the Hudson Valley!
