I am a main technical contact for formulating probiotics into food & beverage applications. I work closely with customers, product managers, and other scientists to create successful solutions for these combinations. I also perform much of the lab work, combining our strains into chocolate, compound coating, gummies, beverages, and dairy applications and then enumerating to check for survival. Data is collected and interpreted and delivered back to stakeholders for discussion and feasability.

In this role I performed routine laboratory enumeration of probiotic bacteria for shelf-life stability studies, and managed data entry into database. I would also routinely translate this data into easily understood summaries and presentations for customers, marketing and sales staff. Developed novel lactic acid bacteria strains for increased resiliency against bacteriophage viruses within the Dairy industry. Emphasis on analysis of bacterial genomes to document ongoing mutagenesis. Also worked closely with technical service & sales staff to address product issues with customers.
