I conducted many crush pad and cellar activities including grape intake, pressing, transfers/racking, barrel filling, cap management, and additions.

I conducted lab testing and trials at the winery for the 2014 harvest including pH, alcohol, sulphur, VA, TA, residual sugar, cold and heat stability (bentotrials), filterability, and NTU. I also did various lab trials including acidity addition and reduction and various tannin trials for commonly desired outcomes (structure, colour stability, mouthfeel). I was also responsible for the monitoring of fermentations via density. This included daily checks of all fermenting tanks and a cross-section of fermenting barrels for sugar degradation as well as for sensory evaluation in order to make the winemaker aware of potential issues.

I worked in the retail shop throughout the year as well as providing light food service in the Summer on the patio. Through the Spring and Summer I worked in the vineyards conducting various tasks such as tucking, suckering, young vine management and training, application of herbicides, and tractor operation.I participated in all areas of grape receiving and production of red, white, rose and sparkling wine; including sorting, crushing/destemming, managing fermentations, pressing, racking, barrel cleaning and filling, and basic lab analysis of juice/must and wine.
