Holbeck Ghyll Country House Hotel, Worked through the ranks of this award winning hotel from Commis Chef - Junior Sous as well as all aspects of the hotel, assisted in the winning of tatinger wine list of the year, maintaining the high required standards. I held this position on the awarding of 3rd AA Rosette and Michelin star under Head Chef Stephen Smith. whilst “under the wing” of Stephen I was lucky enough to be able to visit and work in some truly outstanding kitchens with some of the most renowned chefs of the day and the most exquisite of ingredients, it was these experiences that have fuelled my eye for detail, passion of and thirst for knowledge of only the best produce and ingredients.
