About Ryan Smith
As a South Florida native, I undoubtedly know my way around the Miami restaurant scene. My passion for cooking began when I was about 15, and has garnered an enormous amount of praise and respect since. At the age of 22, I earned the title of Executive Chef at the Gold Coast Grill in Plantation. Two years later, I was given the opportunity to study under local celebrity chef, Oliver Saucy, at the American-focused restaurant, Café Maxx, located in Pompano Beach. There I cultivated a deep knowledge and understanding of fine American cooking and cuisine.With an extensive culinary background and years of experience under my belt, I took my training to Tryst, a gastropub in Delray Beach. I learned how to incorporate local, fresh and organic ingredients into my dishes. In 2010, I headed south to join the culinary team at the Chart House in Coconut Grove. Throughout my time there, I focused my efforts on how to read and troubleshoot a restaurant P&L sheet, as well as how to maximize the restaurant’s profitability – both proving to be invaluable skills in my future endeavors. Following my success at Chart House, I oversaw the relocation of Icebox Café in South Beach to its new flagship location in Sunset Harbour where I elevated the atmosphere, food and overall guest experience. I made my way to my most recent venture as part of the Barton G team, focused on creating impressive dishes with over-the-top presentations for a unique dining experience before joining Centurion Restaurant Group.With an understanding of countless aspects of the culinary industry, I enjoy working with intense flavors, different kinds of sauces and fresh local ingredients. My sophisticated American cooking style lends a different approach to Bulla Gastrobar’s influenced cuisine. After assisting in the opening of the flagship Pisco y Nazca in Kendall, I brought my wealth of experience and talents as the Executive Chef at Bulla Gastrobar Doral.
