Assist the Executive Chef in writing daily prep lists, taking inventory, supervising daily kitchen operations as well as food production for all banquet functions. Functions include up to five simultaneous events with food prepared for over 700 guests. Manage staff of six to twelve dishwashers, prep cooks, cooks, and assistant managers. • Front of house responsibilities consist of interviewing applicants for servers, bartenders, host staff and kitchen personnel. Duties also include speaking with guests concerning complaints, concerns, comments and compliments about the food, service, atmosphere and other areas. Constantly involved in the continuous improvement and development of new and veteran staff members.• Assumed the role of Executive Chef on a weekly basis. Responsibilities included inventory management, writing prep lists, supervising all prep cooks and line cooks, hand-cutting all beef and fish in-house and placing food orders.

Prep and prepare food to order on the restaurant line. Responsible for kitchen operation after manager leaves for the day. Mastered abilities in all positions, including salad/sandwich, grill and sauté stations.

Served as Duty Brig Supervisor, which included managing a section of 10–14 Marines and overseeing a prison of 30–60 inmates. Responsible for the daily physical training of the Marines, as well as training on all emergency drills and operating policies and procedures of the prison. Responsible for custody, control and safety of all inmates and staff members. Ensured all daily paperwork was accurately completed and submitted on time.Served as Building Manager for barracks that housed 100+ Marines. Responsible for all building maintenance, fire inspections, weekly building and individual room cleaning and inspection, and room assignments. Corrections School and Corporals Leadership Course honor graduate.
