Approached by previous employer to take on this challenging role• Duties – Completing weekly Rota’s for three departments (Hotel Dining Room, Hotel Bar, Conference and Banqueting) for 30+ employees, ensuring these are updated for variable change in house counts and new events. • Managing the entire property Wet and consumables ordering for the Food & Beverage Departments, forecasting is essential when up to 3 weddings can be hosted on the same day and room occupancy levels can vary daily. • Stocktaking of the 4 bars and four cellars ensuring stock rotation and cleanliness is exceeding SOP’s.• Responsible for training, development, and appraising of the Food & Beverage Team in order to maximise performance and manage discipline. • Running the restaurant on a weekly basis, checking all opening and closing procedures are completed. Making sure all staff are up to date on their core standards and training such as COSHH, Manual Handling, Fire Safety. • Leading, running and developing events of all occasions. This includes Weddings, Birthdays, Charity Balls, Dinner Dance’s, Funerals and more. Covers often reach numbers of 300+• Cashing up and consolidating large volumes of cash, processing the EOD ensuring this is correct.• I have worked in all departments throughout the hotel to firm a detailed understanding; this includes sales office & front office.• Playing an active role in weekly Operations Meetings.
