I managed to land a role as a waiter at Pétrus (one Michelin star), part of Gordon Ramsay Holdings, managed by the chef Marcus Wareing and sous-chef Angela Hartnett. In a full day role, ensuring the readiness of the whole restaurant (room, tools, etc.) and serving two times a day. After a month I got promoted to demi-chef de rang, in charge of the whole team of waiters. Beyond ensuring perfection in all preparations, I would deal with the team and be the interface between them and the restaurant chef and manager. I would also serve, in the restaurant, at the tables and directly look after customers. After over 3 months, despite a solid job offer (strong raise and company accommodation), I left to resume studies for my Master diploma.
