Assessment of oxidative stress in steady-state dendritic cells in response to food-borne nanoparticlesConsumers already ingest food-borne nanoparticles (NPs) like SiO2 (E551) or TiO2 (E171), and rapidly growing nanotechnology applications will result in increased exposure to NPs via the oral route by intentional or accidental incorporation in food, beverages or supplements. This increases the urgency to characterize their interaction with the intestinal immune system because any derailment of the gut-associated immunity may precipitate severe immune-mediated pathologies. After oral uptake NPs encounter intestinal dendritic cells (DCs). These cells are the key “decision makers” in the immune response, which discriminate innocuous antigens from potentially harmful pathogens. DCs avoid reactions against beneficial commensal bacteria or normal food antigens, but induce inflammation to counteract pathogens. Previous experiments conducted in our lab demonstrate that food-borne NPs can interact with steady-state dendritic cells and alter their pro-inflammatory cytokine secretion.
