Having completed nearly 3 years at The Doyle Collection where I redefined the dining and social experience across the 19 Restaurants & Bars in the 8 Hotels from London, Dublin, Cork & Washington DC. The wide variety of properties highlighted my ability to nimbly swivel my abilities and experience throughout the hotel group. Developing the visual aspects of the properties through landscaping and planting, I created a luxurious surround and entrance for the hotels. I continued this theme of low key luxury through to the Front of House look, feel and design of the bars and restaurants combined with recruiting and training of the floor team and managing kitchens, menu development and budgets. My role extended to the uniform design and production for all roles in all the hotels with a view to the introduction of a cohesive visual brand alignment across all Hotels.I had a similar role previously at House Dublin and other Nola Clan venues in the US and Europe. In The Market Bar Group Dublin, I transformed interiors to dramatically enhance customer satisfaction and business performance. There were many years in London setting up and managing award winning restaurants with Anthony Worrall Thompson and Richard Corrigan, during which I have always been grateful for my years spent as a chef in the Ballymaloe Kitchens and Cookery School in Cork. This was the foundation for my love and passion and the gathering of good food and people together in a comfortable room.
