I was lucky enough to finally make it to East Africa and fulfilled my dream of not only visiting, but living and working in Rwanda. I managed a business called Heaven Restaurant, and worked closely with the all-Rwandan staff to offer new training and to develop valuable and competitive job skills - culinary arts, customer service, business management.

I served as the Program Coordinator, managing three program areas to educate the public about Fair Trade. We organized communities from all over North America to participate in various events, and set a new record for the World's Largest Fair Trade Coffee Break.

I managed the launch of a campaign in the U.S. called Fair Trade Towns, based on the successful model set forth in the U.K. I worked with various national and international organizations as well as grassroots groups committed to Fair Trade. The campaign takes a market-based approach in order to reach the most people to spread Fair Trade as a consumer.

Gandy Dancer Cafe was my creation from business plan and vision to daily management and operations of the floor and kitchen. I implemented various models of 'cafe culture' and used local and Fair Trade products/ ingredients whenever possible in my food and beverage offerings. Open all day and 4 nights per week with live music and various community events.
