As I traveled across the states during my University Foodservice career I witnessed the need to take culinary education to the community. As such I began working with local and national organizations to fan the embers of culinary passion in young children, single moms, home schooled, and anyone wanting a better way of life. Neighborhood corner stores stocking fresh fruits and vegetables instead of snack foods and beverages are where the education begins. I felt the need to leave the corporate setting and branch out beyond the four walls of dining to develop a sense of accomplishment and understanding to those in the surrounding communities. The kitchen is not simply a place for boiling water and adding a few ingredients, it's a life measure of success and ownership of supporting ones self and family in a healthier and happier way.Life is more than numbers on a page or statistics of logging data to track costs and supplies, it's working with people, for the people, giving them a sense of self worth with skills to solidify their well being. Corner stores are a potential venue to improve the food environment and Community Garden Market is such a place. Since then I’ve taken community to the next level and took on the role as Hospitality Chief at Mountaineer Recovery Center to be at the forefront of the Opioid epidemic plaguing our communities. Being a servant leader is about helping others be their best in any situation.

Logistics CoordinatorChambersburg Civil War Seminars & Tours Jan 1995 - Dec 2021The Chambersburg Civil War Seminars, sponsored by the Greater Chambersburg Chamber of Commerce and coordinated by Ted Alexander and Scott Anderson, are held three times yearly. The summer seminar, held annually in July, commemorates the burning and rebirth of Chambersburg, Pennsylvania. Chambersburg was ransomed for $100,000 in gold or $500,000 in currency. When the residents did not make payment, General John McCausland ordered the town to be burned on July 30, 1864. Over 500 structures were destroyed, and Chambersburg became the only northern town burned during the Civil War.

Each CS team will include the school nutrition director, school foodservice staff, a lead chef trainer, and local chefs. Increase the number of foods prepared on site from raw ingredients to help enhance the quality of foods served in schools. Provide additional staff training on culinary and production techniques to increase efficiency and lower labor cost. Incorporate new foods aligned with the 2010 Dietary Guidelines for Americans (DGAs) and proposed new meal patterns; and Increase program participation and overall health through marketing the new foods to customers. The Cook Smart teams will identify new, or will reformulate current recipes, that can be prepared on site from raw ingredients. MSDE and RAMEF will bring together local chefs and culinary professionals to conduct a six day culinary “boot camp” to train the CS team’s school foodservice staff on basic culinary techniques and efficient production management of the scratch cooked menu items. The focus will be on menu items that are: whole-grain products, reduced sodium and saturated fat, dark green and orange vegetables, dried beans and legumes, locally grown and USDA Foods when practical, and in compliance with the 2010 DGAs and proposed Child Nutrition Program meal patterns.
