Beverage Operations for Santa Fe Station Hotel & Casino

To build, create, motivate, train and manage the Beverage Dept., Palms Pool, Ditch Pool Party, Palms Place Pool, Ghostbar nightclub, Pearl concert venue and Café 6 restaurant. I have had multiple roles with the Palms. I was hired as an Asst Beverage Manager, promoted to Beverage Manager, and then promoted to Operations Manager of Beverage & Pools. I am responsible for 100+ employees in the casino, and 70+ employees at the pools. My job duties have included: ordering beer, liquor, wine, dry goods, mini bar product entry, inventory, extensions, monthly P&L reports, payroll/timeclock punches, scheduling, interviewing potential hires, training employees, releasing employees, enforcing company SOP’s and policies, employee counselor, watching labor and overtime, budgeting and cost control, administrative paperwork, time and attendance, employee promotions, internal transfers, and employee of the month nominations. As I was promoted within the company, I became responsible for interviewing, hiring and training of new Asst Beverage Managers. I oversaw 4 Asst Beverage Managers and 1 Pool Supervisor. We all work together to accomplish goals and tasks set forth by our Directors; and run the day to day operations of the casino beverage operations and pools.

I was responsible for managing the beverage operations for the Hard Rock Hotel & Casino Lake Tahoe, which included the casino and restaurant bars, service bars, Vinyl entertainment venue bars, pool bars and Splash Pool party, and cocktail service; to ensure profitable operation and the achievement of customer service goals. I was responsible to hire, train, motivate, evaluate and manage beverage and related management staff in order to ensure that employees receive adequate guidance and proper resources to accomplish established objectives. Monitor daily scheduling to ensure appropriate staffing levels to maintain customer service levels and profit goals. Monitor employee hours to be in compliance with the proper business levels and standards set forth by the company. Monitor and evaluate all department daily activities in order to ensure the successful day to day operation/management of all beverage and related operations. Establish and maintain department standards, policies and procedures, guidelines, and objectives, and maintain other administrative processes such as budgeting and staffing to ensure proper planning and efficient operation of the beverage department and related functions. Evaluate performance of beverage outlets by measuring guest satisfaction, volume, revenue, hours, inventory and costs in order to implement necessary changes to allow the most successful operation of services and fulfillment of the company objectives and goals. Advise the organization in all beverage related issues, special events, beverage specials, seasonal beverages, price changes, product placement and movement, sponsorship from vendors, case buy discounts, case buy allocations, marketing of brands, in order to provide the expertise needed for successful implementation of plans.

Provide excellent customer service and “wow the customer”! Prepare drinks for cocktail waitresses and patrons. Be able to manage myself, fellow coworkers and unruly/drunk guests at my bar. Use and balance a register/bank drawer; sometimes in excess of $50,000. I would bartend 3 days a week and manage 2 days a week. I wrote the bar staff schedules during the pool season and handled time off requests. I trained the bartenders with the Hard Rock Hotel & Casino standards and helped enforce the policies along with my upper management. I did the ordering for all the pools at Hard Rock. I dispersed all the auto gratuity payments for all pool employees every day and would email this to payroll every 2 weeks at the end of the pay period. I helped with payroll also using Timesaver. I worked with auditing for bank overages/shortages, guest charge disputes, and employee tips. I also worked with IT a lot with POS issues, screen button placement, building the POS screens, drink/bottle prices and bartender/cocktail server POS swipe cards. I also worked with engineering, locksmiths, EVS, Hard Rock Executives and many more departments almost on a daily basis. I was responsible for keeping all my bars, including portable/satellite bars, in proper working order and always health code compliant. I also helped the cocktail waitresses with check issues, guest complaints, guest preauthorization’s, guest payments and credit card companies for guest payment. On top of everything I mentioned above there is always many more day to day operations that I helped handle every day. Plus have a good time with my fellow coworkers, promote teamwork and ensure the guests are having a good time. Treat people the way I would want to be treated.
