Parkers Waffles was a popular food cart that served breakfast and lunch customers at Portland State University and NE Portland. My wife and I opened our first location in July '09 and then opened our second less than a year later. The Parkers focus was 2 fold - first, to create an exquisitely delicious waffle and second, to couple it with innovative sweet and savory toppings. From sauted apples, streusel and bourbon butter to Otto's sausuages, sauerkraut, and gruyere cheese, our goal was to redefine what a waffle could and should be. Parkers received rave reviews in the Willamette Week, the Oregonian, Mixx Magazine and the New York Times, among others and was successfully sold in the winter of 2010.
