Profile bio

About Sean Findlay

I am currently working as a SOC 1 Team Captain & Analyst in a Security Operations Centre for Novacoast, where I lead a team in using various SIEMs to analyse data and logs, triaging alerts to distinguish between false positives and real threats. My responsibilities include investigating real-time alerts using open-source intelligence tools, creating incident cases in accordance with SLAs, and escalating issues to the customer's SOC and IR team for response and threat mitigation. Security tools that I use daily include Splunk, LogRhythm, LogRhythms Axon, SentinelOne, Chronicle, AlienVault, IBM's QRadar Suite and Pillr (Novacoast's SIEM). As a Team Captain, I have additional responsibilities, including assigning Analysts to customer environments. I aim to be approachable and responsive, ensuring that Analysts feel comfortable seeking guidance or advice on investigations or any related matters. In addition to my professional role, I have been studying with the Open University since 2020 in pursuit of a BSc (Honours) in Cyber Security. More recently, I have been studying two modules – TM255 Communication and Information Technologies, and TM359 Systems Penetration Testing. These modules, representing my second and third years, respectively. TM359 is in partnership with EC-Council and aligns with the majority of their Certified Ethical Hacker (CEH) course, which I plan to complete by taking the certification exam.

Customer Service Representative

Middlesbrough, England, United Kingdom

Here I worked for as a call centre agent selling home insurance for Post Office. The role was a non-advisory sales role in which I could not push products. Customers would generally call for insurance queries, to renew their home insurance or to purchase a new home insurance quote. A small minority of the calls would have been assisting customers with the online self-service centre with general password resets or escalating the problem if I could not resolve the problem at first contact. Other duties included light spreadsheet admin and following up on customers with agreed customer call-backs.

Jan 2022 - Dec 2022

Head Barman

Lavenham, England, United Kingdom

I spent my first few months here working in the fine dining Gallery restaurant. We serve breakfast, lunch, afternoon tea & dinner in the gallery, offering tasting menus with wine flights, this is a very popular venue for weddings and large parties often running multiple functions at once. The bar itself is small but with 3 restaurants and a lounge to serve it can get quite busy and teamwork was a must. I would set up pop-up bars for certain functions and I was responsible for ordering the bar stock and liaising with the other supervisors on shift to manage the service. Other responsibilities include cashing up tills at the end of the night, opening the bar and prepping the bar for service.

Restaurant And Bar Supervisor

Cambridge, England, United Kingdom

Even though this was a very quiet Bar/restaurant I still learned a lot and had to step up to the challenge as after a month or two the general manager left, and he was not replaced until we closed the site. My duties included running shifts, opening, and closing the building, security checks, cashing up, stock counts, creating/pricing menus with the chef, interviewing/hiring, creating rotas for kitchen & F.O.H, I would program the tills with new dishes and offers, sending invoices to accounts, GP pricing, managing guest’s deposits and data protection. I created a handover for the new owners; staff contact info, fire codes, upcoming Christmas bookings, Passwords etc. I then moved to another site within the company.

Mar 2018 - Mar 2019

Bar Team Leader

Burnham Market, England, United Kingdom

I would serve drink over the bar and for the fine dining restaurant, greeting guests and directing lost guests, keeping the cellar impeccably tidy and organized due to how small it was and how large the deliveries are, cleaning all the lines weekly, cashing up tills and closing the bar. We also offered full table service at the bar tables and small restaurant.

Restaurant And Bar Manager

Braye Beach Hotel, Alderney

Alderney

I report directly to my General Manager and Assistant General Manager. I started just looking after the restaurant during services taking orders and payments and billing tables quickly and efficiently, training staff and students, up selling of food and drinks. Then I quickly found myself ordering wet stock for the bar and looking at daily sales figures to meet my targets for the month, and then my duties evolved into creating rotas for both the restaurant and bar, I created cleaning rotas to occupy staff during the quieter periods in the winter. Whilst my Assistant General Manager was away on holiday I then picked up her responsibly in organizing upcoming events e-mailing customers to find out exactly how they want their party to go and ensuring it all went as planned. Maintaining rapport with our regular guests, up selling on all drinks to beat previous targets, managing stock and ordering new/better and cheaper stock, stock rotation to avoid it going out of date, serving wines in our restaurant, transferring stock and minimizing waste to increase profits, billing tables accordingly, and cashing up the tills at the end of the night.

Jun 2015 - May 2016

Assistant Restaurant Manager

Herm Island

This was my first managerial role in hospitality and I reported directly to my restaurant manager and General Manager, I was predominately located on the restaurant floor looking after the smooth service of the restaurant and touching on tables to ensure guests were experiencing the high standards that they expect every year they return, I would try to get as much positive feedback and critical feedback from guests to improve their experience without being intrusive. I would also help my Assistant General Manager with setting up marquee events and running of service in marquee services. Other duties including leading the large team of waiters, working closely with my restaurant manager, training of staff before the hotel opened at the start of the season, running the waiters side of the pass, helping out on bars when pressure was too high, creating table plans for our current guests and future guests as they always had the same table otherwise upgraded to a window, training the wine waiter and helping him manage his cellars and taking pre orders in the lounge before and during dinner service.

Mar 2015 - Jun 2015

Waiter & Assistant Wine Waiter

Herm Island

This restaurant has 2 rosettes and this is where my passion for food and wine first started to truly shine through, I started as a waiter, I was in control of my own section, I was attentive to guests without being intrusive and built strong relations with some of our regular guests. Other duties included opening and closing of hotel at the beginning and end of the season, taking orders, vigorous cleaning procedures, and cash handling, and working special events such as weddings for up to 160 people. I was then offered the opportunity to get into wine waiting which I accepted with open arms; this was a big step as you would serve wine for a whole restaurant full whilst upselling and advising guests on pairing wines. This was also the first time I was introduced into stock management, we had 6 wine cellars and a wine list of up 180 wines which I got very comfortable with. Other duties included cleaning of wine cage, polishing wine glasses, restocking wine cage for lunch and dinner services, tidying cellars to make room for the next order and helping out waiters in any other way possible.

Mar 2014 - Oct 2014

Waiter

Keswick Country House Hotel

My duties included ensuring guests were happy with the service they were receiving, remain professional and give a good level of customer service, serving food, clearing tables, keeping the kitchen clean and tidy, hoovering of the restaurant, working in a large team, polishing of cutleries and glasses, laundry, delivering room services, setting up the restaurant for breakfast and dinner and any other duties that may be asked from time to time.
