In order to target the Hispanic market, I created “Bongos” overlooking Bachman Lake in north Dallas, in 2007. I took a former gas station and redeveloped it into a Cancun-styled Latin grill. We installed a beach on the front of the property complete with a sailboat and a thatched cabana area. We operated almost 24- hours per day with breakfast, lunch, dinner, live-entertainment, dancing and a late night taqueria. Achieved sales over $500 per sq.ft. per annum. Solely responsible for all aspects of the operation including:- Marketing, new client development- Construction, design and development- Research & development / menu and recipe development- Human resourcing- Tax, finance, accounting and legal- Advertising and public relations- Daily operations and procurementWe were the first in the area to offer Tex-Mex delivery service and obtained permission from the TABC to deliver beer. In 1986, sensing the demand for quick-service Oriental food, I created, designed and built the nation’s first double-drive-thru Chinese restaurant concept called “Wok ‘n Go”. I utilized an “undevelop-able” piece of property which required plating, zoning, utility construction and a licensed ground-lease with the City of Dallas. After a short time in operation, we were the only Oriental operation in the U.S. to receive a license from the American Heart Association as part of their “Heart healthy” program. We obtained a manufacturer’s license from the Department of Agriculture which allowed the sale of packaged meals to convenience and grocery stores. At the store level, we achieved sales over $1,000.00 per square foot, without alcohol and with each menu item priced under $3.00.I was soley responsible for:1.Creating, filing and funding of Master Limited partnership as General partner.2.All zoning, plating, licensing and development matters.3.Architectural design and general contracting.4.Legal, accounting and tax matters.5.Advertising, public relations and marketing.6.Research, menu and recipe development.7.Operations and appropriations.
