Special Projects ManagerBass Coast Health May 2018 - PresentBass Coast health operates two aged care facilities, each with 30 residents, a hospital with a total of 60 beds across two wards and provides 150 meals on wheels a day.This focus of my role has been to restructure the organisation and improve work processes during a major refurbishment program.A key achievement has been to establish a café which has generated substantial additional revenue and which will be expanded as part of the facility’s expansion program. I led the design process, selected and purchased equipment, designed the menus and recruited and trained staff. The menus incorporated allergy and brand specific items to provide a healthy variety of food.I also expanded the menu, supply meals to all three Bass Coast Health sites, acquired new food preparation equipment and have incorporated the latest knowledge and research into food selection to accommodate the needs of the increasing number of people with allergies. -
Hotel Services / Food Services ManagerBass Coast Health May 2010 - May 2018WonthaggiI managed the Food Services and the Environmental Services Departments with 76 staff and a $10m a year budget at the Bass Coast Health facilitates at Wonthaggi, Phillip Island and San Remo.In this role I developed and managed the budgets, ensured legislative compliance, provided well-balanced, nutritional meals, and developed menus in collaboration with specialists. I was also accountable for OH&S, improving services and standards, and overseeing food preparation, storage, refrigeration and kitchen hygiene.I managed the refurbishment of the main production kitchen, streamlined processes, improved efficiency through modern practices and methods. I reduced infection rates by introducing a fully biodegradable meal tray system and elevated the Meals on Wheels Service System by wider meal choices, while implementing environmentally friendly and sustainable packaging.I also developed and introduced texture modified meals for residents and patients unable to able to eat solid foods. I was enlisted by other hospitals and aged care facilities to educate the texture modified food production and delivery systems. In addition, I trained staff at other facilities on streamlining the processes adopted in their kitchens. -

I was asked by the owners of the Continental Hotel to move Sarah Ashe restaurant to their premises to enable the offer of both businesses to be expanded while providing a multi-purpose function facility.
