Owner operator of small batch artisanal tonic water made on the Island of Bali, Indonesia. Initially a pandemic passion project turned commercial venture, this tonic was slow carbonated using refined processing techniques utilizing local cinchona and other fresh botanicals.A well received product showcasing my skills in end to end processing & recipe development.

My objective at Expat was to take this business to further success by initially assessing company performance and then identify areas of potential growth through correct menu costing, inventory management and evaluate best working practices throughout the business model in both retail and wholesale.I built menu models and identified areas of risk due to incorrect pricing, tracked waste and developed various other tools for management account purposes.Working closely with the directors and other stakeholders, I developed in-house food & beverage offerings that were suitable to the nature of the business and positioning. Another key piece of work here was to produce a stand alone dna document that clearly stated our objectives as a business and hiring strategy.All of these activities are supported through team engagement, constant training and the development of meaningful sop documents.

Reporting directly to the head of beverage services this role aimed to develop excellent product knowledge across all 8 of the P&O fleet while ensuring there is a concise strategy for selling and delivering first class drinks to our guests. Other facets of the role included development of requirements for tools for the job, one best way practices and supporting materials to help deliver the cocktail proposition on board, whilst simultaneously helping to support all crew members personal growth by creating background training materials, sop’s and user friendly recipe guidance. I also supported the shoreside beverage function by helping creation of new cocktails and introduction of products based on guest wants and needs that collate with current drinking trends. The role helped drive CSQ scores by delivering guest facing educationals and seminars on board whilst raising personal profile and reinforcing confidence in the P&O brand beverage proposition.

Primarily leading a team of the best bartenders on the vessel, the mixologist is responsible for overall drinks consistency of beverage onboard, the management of the highest profile bar and the delivery of training modules in line with brand standards and operating procedures.Reporting directly to the senior beverage manager, the mixologist is additionally responsible for delivering guest educational sessions and VIP events whilst simultaneously fulfilling the regular expectations of the management of an independent cocktail bar. This is all measured through kpi reporting and is aligned with cost control, guest satisfaction and the implementation of new drink offerings based around current drink trends in line with the onboard brand proposition.

Providing reporting and insight into operational sales and cost performance, this role supported operational planning and budgeting and financial assessment of new initiatives, plus menu pricing across 8 menus through production and analysis of the cost base. I also supported the delivery of the regular financial reporting including a weekly Food & Beverage trading pack, Food & Beverage monthly insight pack and monthly operations packs.This role continued F&B margin specialisation reporting on monthly food & drink margins and reconciliation at the period close to support Food & Beverage pricing & segmentation strategy across the food and beverage offer in the UK Premier Inn estate & beyond.
