Project title: Food Insecurity and Dietary Tendencies in the UC Davis Student-Run Clinic Patient Population• Worked with a team of second year medical students and undergraduates on an original research project under Dr. John Rose to determine the prevalence of food insecurity and nutritional tendencies among diverse patient populations served at the UC Davis Student-Run Free Clinics• Approached patients about the project, validated consent, ensured completion of surveys, managed tracking data, completed data entry, and assisted the research team with data quality control Study Description: An investigation of the prevalence of food insecurity and of dietary tendencies in the populations served at the UC Davis Student-Run Clinics. The relationship between sufficient access to healthy, nutritious foods and certain health outcomes have been well established, including certain chronic diseases and mental health. Nationally, the average rate of food insecurity is 12.3% and is even higher in Sacramento County (16.3%). Given the vulnerability of populations served at SRCs and the commonality of chronic disease, this project studies how these issues play a role for these patients. The research involves the use of modified validated surveys to measure food security and food frequency. The results will be used to determine the correlation between food insecurity and poor dietary tendencies, as compared to USDA nutrition guidelines. The long-term goals of this project are to provide evidence upon which SRCs can base future interventions to meet identified needs and to provide a reference point for prospective studies assessing the benefit of these interventions.
