11 years cheese experience, managing the daily cheese production from making mozzarella, cheddar, and specialty cheeses, such as provolone, and smoked provolone. Ran all cheese equipment from cheese belt, vats, pasteurizer, milk separator, clarifier, and the rotation of cultures making starter. Experience with secondary starter and powdered milk. Overseeing all production areas from milk receiving, to packaging, including whey plant and warehouse. Gained further knowledge taking a Cal Poly cheese coarse. Started in the ingredients department at Hilmar cheese in 2008. Currently manage employee's and the daily permeate production with Reverse osmosis, evaporation, Crystallization, Dryers, and packaging. With 26 years of Dairy industry experience, my strengths and satisfaction come from working with people.
