As a Director with Fortune Bay Resort Casino I report directly to the General Manager. As Directors, we are trusted to ensure the property meets its financial requirements and its high level of Guest Service. I am responsible for numerous departments including F&B, Hotel Operations, Meeting & Convention Services, and Group Sales. I work closely with the Marketing Director and Casino Operations Director to maximize the revenue from the casino floor. Position Summary• 11 directly reporting Managers, 150 + indirect employees• Develops and implements policies and procedures to ensure that all work practices meet or exceed the established standards• Develops and implements the division’s budget and revenue forecasts. Develops and implements controls for expense management. Utilizes labor management tools to schedule and control labor costs• Develop project pro forma and recommendations on implementation• Assist in the Development and implementation of Marketing programs• Work with the Executive Chef to develop menus for the Food Service departments and reviews food costs on a regular basis to ensure we are running at peak efficiency• Plans, designs, implements and controls Food & Beverage operations across all businesses, ensuring profitability, efficient operations and adherence to established standards• Establishes and maintains standards for food and beverage quality, presentation, handling, sanitation and safety in alignment with property standards and applicable regulations• Sets annual rate schedule for the hotel operations• Planning and organization for all special property events involving reporting departments• Conducts frequent inspections of all areas in division to ensure that all areas meet or exceed the established standards• Provides timely formal assessment of individual team members in alignment with the performance review policy and procedures
