Achievement of budgeted food sales, beverage sales, labour costs and profitability.Timely analysis of Food & Beverage Prices in relation to the competition.Participation and input towards F&B Marketing activities.Preparation of Sales Promotion & Mailings.Competitive analysis of food and beverages on half-yearly and others (banquet and room rentals) on a quarterly basis.Assure the completion of weekly schedule and shift duties while maintaining a labour cost below the maximum of 26%.Assure the ordering and purchasing of bulk & draught beer, wine, liquor, premix canisters and canned soft for Food& Beverage.Assure bar inventory for functions, including opening and closing inventories, accurate bar summaries and cash deposits are prepared.Creation and analysis of revenue, labour and food cost, stock inventory, Gaming Reports (Gaming Float reconciliation, Polled Revenue Report), Financial Management Report, Cash Variance Report.Work with Chef, General/Venue Manager to ensure smooth operations of the venue on a daily basis.Attendance and participation at weekly F & B meeting and Department Head meeting.

Applying a systematic preventative approach for Hazard analysis and a critical control point (HACCP).Maintenance of all department control procedures.Delivering superior service and maximizing customer satisfaction.Responding efficiently and accurately to customer complaints.Appraise staff performance and provide feedback to improve productivity.Ensure compliance with health regulations, sanitation, cleanliness, OH&S, and liquor licensing laws including RSA.Manage Bistro’s good image and implement ways to improve it.Keeping detailed records of stock levels.Manage and coordinate the promotion of the Bistro in the local community through word-of-mouth, website update, social media and events.Train new and current employees on proper customer service practices.
