A catalyst of the "Mexico-Forward" culinary movement. Since the post-pandemic era, Medina has shifted the way Americans have perceived or written about Mexican cuisine. His narrative on the importance of intentionality has transcended Mexican food from something on a plate to themes and topics revolving around culture, history, and the socio-economic effect of Mexican cuisine throughout the US. In under 4 years, Medina launched a number of Restaurants, Bars, & Cafes, all connected by a common “Mexico-forward” theme. In the process his restaurants have earned him some of the most coveted titles in the industry, including a James Beard nomination (in under 14 months of existence) and various national recognitions such as Bon Appetit’s “10 Best New Restaurants in America” and the NY Times “50 Best Restaurants in America”, both mentions for two separate restaurants, a feed never before accomplished by another restaurant group in Portland, OR.In 2022, Medina began leveraging the success and accolades of his restaurants onto the production of Food & Beverage media content. In September of 2024 Medina will officially launch TODOS Media, a media platform celebrating the stories and elevating the voices of the people in our community.
