• Dropped FOH labor from 12% to 10% in 6 months. Food cost from 31% to 28% in 3 months.

• I was the AGM and then GM of this healthy, gourmet, fast casual restaurant. We offered take out, catering, and a full service/full liquor bar as well. We offered and prided ourselves on fresh, locally sourced product.
• Oversaw operations of a ​gourmet, farm to table fast-casual restaurant.​ Responsible for financial results, building top line sales, training managers, hiring, and health department standards.
• Increased sales from $2.8 million to $3.2 million in two years.
• Did weekly outreach to local business’ to build catering sales.
• Implemented structure and systems - daily line checks, pre shifts, checklists, S.O.P binders, accountability tool, & invoicing system.
• Health department scores consistently in the 90th percentile.
