• Responsible for the development and costing of the food and drink menus.• Involved in the coordination of the bar’s relocation and refurbishment.• Licence holder of the premises.• Responsible for managing all aspects of the bar focusing on exceptional customer service, set-up, and inventory procedures.• Completion of Customer Follow-up calls on a timely basis.• Timely analysis of Food & Beverage Prices in relation to competition.• Participation and input towards F&B Marketing activities.• Entertainment of potential and existing customers.• HR -recruiting, hiring, training, evaluating and terminating food service staff members

* Inspiring bar staff to deliver prompt, friendly and efficient service at all times.* Daily Stock Control.* Responsibilities including recruitment, training and development of staff. * Organising the daily rota and duties. * Responsible for management of brand standards, stock rotation & cashing up. * In-depth understand of measurements and weights of drink levels.* Managing a team of 14 permanent bar staff & supervisors. * Assist Bar Manager in the control of wage costs in line with budgetary requirements* Support the Bar Manager in the implementing and/or following of procedures concerning recording of stock movements e.g. correct charging of items and billing.* Ensure stock items behind the bars are always within expiry date* Ensure staff awareness of relevant company policies

Involved in the setting of department targets and objectives, and to monitor and strive for their achievement* Taking positive action to meet department objectives and targets* Assist Bar Manager in the control of wage costs in line with budgetary requirements* Support the Bar Manager in the implementing and/or following of procedures concerning recording of stock movements e.g. correct charging of items, billing* Ensure stock items behind the bars are always within expiry date* Ensure staff awareness of relevant company policies

* Collect money for drinks served.* Check identification of customers to verify age requirements for purchase of alcohol.* Balance cash receipts.* Attempt to limit problems and liability related to customers' excessive drinking by taking steps such as persuading customers to stop drinking, or ordering taxis or other transportation for intoxicated patrons.* Clean glasses, utensils, and bar equipment.* Take beverage orders from serving staff or directly from patrons.* Serve wine, and bottled or draft beer.* Clean bars, work areas, and tables.* Prepare cocktails and other drinks.* Serve snacks or food items to customers seated at the bar.* Order or requisition liquors and supplies.* Plan, organize, and control the operations of a cocktail lounge or bar.* Ask customers who become loud and obnoxious to leave, or physically remove them.* Slice and pit fruit for garnishing drinks.* Arrange bottles and glasses to make attractive displays.* Plan bar menu.

Manage the cellars with the assistance of the Head SommelierImplement sales price for wine, setting up promotions.Ensure the smooth running of the restaurant wine service.Implement different wine lists.

* Operating the till and taking cash.* Serving customers from behind the bar, offering advice on drinks.* Responsible for keeping the bar clean and tidy, collecting empty plates & glasses.* Mixing cocktails for customers.* Preparing the bar for service, restocking wines and spirits.* Providing a professional, friendly and courteous service to all customers.* Taking food orders from customers in the seated restaurant area.* Delivering food and also drinks to customers at tables.* Occasionally working at weddings, private parties & conferences.* Dealing with guest complaints in a friendly and efficient manner.* Ensuring all cash, charge, float and till procedures are carried out in accordancewith company policy
