Nous privilégions les groupes de petites tailles (maxi 12) afin de garantir au mieux la réussite de nos candidats. École créée par Stéphanie Hennion DipWSET, toute notre équipe de formation a obtenu au moins le Niveau 3 en vin du WSET.

    Chaque semaine, le Mardi et le Mercredi, j'ai rendez-vous avec les apprentis de la Mention Complémentaire Sommellerie du LHIL. Au programme: Analyse sensorielle, Commercialisation, Connaissance des vignobles, Autres boissons et legislation.La Mention est en alternance, les apprentis ont un contrat tri-parties et sont en entreprise (Restaurants ou cavistes) 3 jours par semaine.Je les emmène une semaine en vendanges en début d'année, et nous visitons un deuxième vignoble en fin d'année.Le CFA de Lille participe financièrement à la formation en Brassage des apprentis. Cette action pédagogique a lieu dans la Microbrasserie du Singe Savant, Lille Moulin. Les apprentis apprennent les étapes du brassage, formation théorique de 3 heures. Ils créent leur recette, puis brassent leur propre bière. Tout le monde brasse, les ateliers sont prévus par groupe de 3/4 pour assurer. Nous revenons faire la délicate étape de mise en bouteille. Une soirée est organisée avec les maîtres d'apprentissage afin de faire découvrir les réalisations des apprentis.Parmi les boissons apprises:Spiritueux (eaux de vie de Malt, de sucre de canne, de raisin, de pomme), Kéfir, Kombusha, Nihonshu, Thé, Café de spécialité...en plus du vin !
