About Stephanie Hoover

Hello! My name is Stephanie Hoover, and I am currently the Coalition Coordinator for the Knowledge Empowers Youth (KEY) Coalition. I oversee the coalition, its members, and programming efforts regarding youth substance use prevention, harm reduction, and health education for the community of New Trier Township and the North Shore in Chicagoland.I am a Public Health Professional with a Bachelor's Degree in Public Health and a Minor in Public Policy from the University of Illinois at Chicago (UIC). I have focused much of my study on Public Policy, Food Access, Environmental Sustainability, Health Education, and Health Inequity and Disparities in vulnerable communities and populations.     Sustainability Internship Program (SIP) - Food Insecurity:Collaborated with the UIC Wellness Center, the UIC Office of Sustainability, and another intern, to conduct field research about various food-related resources on campus, which included water fountains, vending machines, eating spaces, and microwaves. By mapping the location and accessibility of these resources, students can be informed of the resources accessible to them on campus. Through informing and encouraging UIC students to use these resources, we hoped it would create more utilization of these resources and help food insecure students learn more about what is at their disposal. We went to approximately 30 buildings and recorded all findings about each food-related resource. Additionally, the water fountains have a refilling station, which records the amount of water bottles saved by each particular water fountain. We intended to use this information to enlighten decision-makers about the positive impact these refill stations have on plastic waste and being more cost effective for UIC Students. Both of these parts of this internship are meant to inform UIC Officials about the negative and positive impacts of various food-related resources, and help increase accessibility or decrease negative environmental impact.Additionally, my colleague and I participated in a poster presentation to discuss the impacts of our work and the changes that need to be made to ensure students experiencing food insecurity have access to the resources they need.
