Main Achievements• Proven business skills – accounts, budgeting and forecasting, stock control, cash flow. Ran my own business/restaurants as well as being Director and having full P&L responsibility for wine business across 3 islands.• Recruitment, training and managing staff – Selected and developed staff in my own businesses, and over past 24 months have built a team of 40 individuals at new facility at Warner Brothers studios. • Liaison with external companies, suppliers and other trades –Many examples (including currently) of responsibility for selection of suppliers and managing the relationships to achieve my quality, cost and service standards.• Licensee – experienced in imports and export (HM Customs clearance etc.) as well as licence application and duties, and all issues relating to operating and running licensed establishments• Sales and Relationship Management – ran my own business based in Sark and later had full sales responsibility for new Channel Islands business (French Imports Limited) where I built relationships with key private, corporate and hospitality clients to increase sales 500% in first 2 years• Classically trained Executive Chef with fine dining and contemporary experience – ran my own restaurants, worked in and sold to many, many others, and currently manage a team of 40 to deliver 1000+ meals a day across numerous outlets. • Solid experience of contract catering – since returning to UK in 2010 I have been self employed mostly in the Lindley Group and worked within contract catering kitchens as Chef in 17 locations as well as my current position which is a multi-million pound build and required all aspects from staff, to menus, to costings etc. • Highly motivated and dynamic – numerous examples of ignoring the clock, rolling up the sleeves and inspiring the team to hit the deadlines.
