I had always wanted to work in one of the world's top restaurants. This was a four month drilling in how to work hard and fast under intense levels of pressure with incredible ingredients and a large team of exceptional chefs, to achieve excellence.

Designed and delivered training for refugees and asylum seekers cooks to become cookery teachers. Trained 90 chefs. Designed and project led development of flagship London cookery school.

Developed a social enterprise with Hackney Council and the Mayor of London using recipe kits as a tool to help people make fresh, homemade food in areas of food poverty.
