When I founded the original Steve's Ice Cream in Somerville, Mass., near Cambridge and Boston, I introduced low-air content ice cream by altering the transmission on a commercail batch freezer. I also introduced mix-ins (now called Smoosh-ins at Herrell's -- see below), whereby I took name-brand candies and confections and mixed them into ice cream one scoop at a time at the customer's request. I like to call myself "The Inventor of the Ground Heath Bar." Due to these innovations, the country now enjoys flavors such as Heath Bar Crunch and Cookies and cream. But I take most pride in the quality of the ice cream we produce. I eventually sold Steve's, and opened Herrell's Ice Cream in 1980 in Northampton, Massachusetts.Specialties: Quality ice cream, ingredients, freezers, equipment, flavorings; ice cream store operations, layout, staff issues.
