Part of the opening team for the third location of Sixty Vines – a Napa Valley inspired restaurant and wine bar featuring 53 wines on tap. Assisted with the development of pre-opening training materials and conducted training classrooms during the opening process. For ongoing operations, I oversaw aspects of payroll and human resources concerns for a business that was on pace to do $7.8 million in sales for F20 prior to the Coronavirus lockdowns and employed over 90 people on a full time basis. We were able to achieve an average Yelp review rating of 4.68 during our first six months in business. On a day-to-day basis I was charged with writing departmental schedules, performing quality line checks across a seven-station, nine-man line, creating lasting impressions with dining room patrons and delivering effective in-moment-feedback to the waitstaff and service team members.
