After the sale of my previous company, I took the opportunity to attend culinary school. Subsequently graduating with honors, as a result of that, and my extensive business experience, I was hired as the Executive Chef at Declan’s Irish Pub in Chicago, IL, where I was responsible for management of the entire back of the house, including staff, budget and daily operations. I worked with ownership to makeover seasonal menus, reduce costs, increase revenues and build the brand. I had also redesigned the kitchen's workflow and processes, in addition to hiring an entirely new staff. I provided oversight on Human Resources-related issues, and had responsibility for the budget, forecast and profit-and-loss of the kitchen. During my time here, I reduced costs by 35% and increased sales by 25%. Prior to that, I staged for the Chef Partner at Biaggi’s Ristorante Italiano, working all of the different stations in the back of the house and reviewing systems, operations and expediting. I also sat on their National Wine Selection Panel for a season to review and select wines, including the reserve list, for their menus nationwide.

Originally hired as the Business Manager to oversee operations and facilities management; was quickly promoted to Director of Human Resources, due in large part to my creation of that department, then became a member of the Executive Management Team. Most notably, contributed to the growth of the company from 15 employees to over 200. Responsible for developing structure, processes and strategies relevant to the growth of the organization. As a rapidly growing company, while I managed an ever-growing staff to assist with the day-to-day operations, I was able to create policies and procedures to enable compliance.
