I have been a chef for my whole working life and in the last few years started writing about food out of sheer irritation.I lived and worked as a chef for many years on a small island in the Caribbean where supplies were limited, erratic and even occasionally non-existent. This was particularly tricky when running the kitchens of expensive, tourist ridden, restaurants. I was already quite good at avoiding waste but this time in the tropics taught me to make the most of every single scrap of food available. On returning to England and seeing so much good food being thrown away I decided to tell people what to do with it, so to speak! I wrote The Leftovers Handbook, a reference book of over 450 potential leftovers together with ideas and recipes for making the most of them.I am writing a serious of books on Genius Recipes in each of which I give one key or “genius” recipe, lots of other recipes all based on this one recipe together with every piece of info I can think on varying it to enable readers create their own wonderful dishes. I have also written a few one-offs, have written for Vegetarian Magazine and write a food blog, Sudden Lunch!My primary goal is to teach people to cook real food and to enjoy eating it – that this also saves money, avoids waste and even helps the planet is great too!
