We switched to a specials board and a standard menu so that we could make greater use of the produce available to us and coming in thru the front door & back door from local growers or somebodies backyard. It was an exciting time for me to have the freedom to move creatively and develop lots of yummy dishes. It was mostly a short order type of place so that was also a new challenge for me coming from a predominantly a la carte restaurant environment.
