I also make sure that kitchen and diningareas are cleaned according to standards.I also keep records of these practices for health inspectors.Finally, I monitor the actions of staff and customers to be sure that safety standards and liquor laws areobeyed.

Bartenders must sell alcohol. Tempting tipsy patrons to keep drinking is highly encouraged, especiallywhen it results in big tips. At the same time, they have to deal with any customers who have consumedtoo much alcohol. Refusing service, arranging a taxi or even calling the police may be necessary insuch a situation.Bartenders must also keep careful track of tabs and ring up customers at the end of the night. At theysame time, they have to keep the bar well stocked, pour beer or wine and mix consistent cocktailsquickly.
