I have devoted my entire career to the hospitality industry – specializing in opening restaurants. In the 90’s, I opened location after location for The Palm, Del Frisco’s, Sullivan’s, and Lone Star. I was also involved as a consultant in the creation of the highly regarded Striped Bass Restaurant in Philadelphia.In 2009, I undertook my most ambitious project: The Union Trust Steakhouse in Philadelphia. Although the establishment was over leveraged and ultimately failed, I feel like our team did not. We rescued an amazing abandoned historical building built in 1888 that was filled with pigeons and the homeless when we started and turned it into one of the most beautiful restaurants in the world.3 Hollywood movies were filmed there in the first year we were opened. After our restaurant closed, the building was turned into a much-heralded wedding venue run by a catering company.I went on to open 2 casinos, including the 2018 relaunch of the Revel Casino in Atlantic City as Ocean Resort. This was again a very ambitious project with a renovation budget of $175M. The facility includes 2 nightclubs, 13 restaurants, 12 live entertainment venues, and 3 outdoor kitchens for the pools and cabana. Before that, I was the opening consulting chef at SugarHouse Casino in Philadelphia when they undertook a $185M expansion. I designed the kitchens, including an 8000 sq. ft. banquet kitchen.The process of building new restaurants is what I truly love. In all, I was involved in the openings of more than 100 establishments.
